This substantial, savory, and filling soup is made with smoky bacon, potatoes, carrots, leeks, celery, and a town sausage. Also, it can be made in under 30 minutes, making it the ideal supper for hectic weeknights or unproductive weekends. Ingredients:
- 450g smoked bacon, chopped
- 8 medium-sized potatoes, peeled and cubed
- 3 carrots, peeled and sliced
- 1 leek, sliced
- 1/2 celery stalks, sliced
- 1/2 village sausage, sliced
- 2L of water
- Salt and pepper to taste
Instructions:
- In a large pot, cook water add the sliced leek, celery, and sliced village sausage to the pot and sauté for a few minutes until the vegetables are softened
- Add the sausage and the chopped bacon over medium heat until it becomes releases its fat. This should take around 5 minutes.
- Reduce the heat to low and let the soup simmer for about 20 – 30 minutes or until the vegetables are tender.
- Add salt and pepper to taste and stir well.
- Serve the soup hot and enjoy!
